You saw perfect picnic outfits in Alexa’s post above, now it’s time to think about what dish to prepare for those neighborhood picnics, parties, and barbeques this weekend. My go-to for the season is simple to make but super flavorful and delicious: tortellini salad.
Salad
20 ounces fresh cheese tortellini, cooked al dente and drained
1/2 cup minced fresh parsley
1/2 pound salami, cubed
1/2 pound Havarti cheese, cubed
1 red and 1 green bell pepper, chopped
1 cup black olives sliced
4 green onions including tops, sliced
Dressing
6 T red wine vinegar
2 t dried basil
2 t Dijon mustard
½ t salt
½ t coarsely ground black pepper
2 cloves garlic, minced
1 cup virgin olive oil
In a large bowl, combine tortellini, parsley, salami, cheese, bell peppers, olives, and green onions. In a blender or food processor, combine all dressing ingredients and blend well. Pour ½ dressing over salad and toss thoroughly. Cover and refrigerate at least for 1 hour. Pour more dressing on salad when ready to serve. Yield 6-12 servings.
